After years working in luxury travel, we thought we understood Cabo before ever arriving.

During a recent COZY weekend in Los Cabos, our co-founder Thiago Fortunato experienced Cabo for the very first time and discovered a side of the destination that felt far more layered, calming, and culinary-driven than expected.

And interestingly, that feeling started long before the hotel check-in. Because sometimes the tone of a trip is shaped by the way you arrive.

The Flight That Changed the Weekend

Anyone who travels frequently understands how exhausting airports have become. Long security lines. Delays. Crowded terminals. The strange reality of waking up before sunrise for a two-hour flight.

Flying with Aero completely shifted that experience.

The journey begins at a private terminal in Van Nuys, where the atmosphere immediately feels calm, controlled, and remarkably efficient. Instead of crowded gate areas and constant announcements, guests enter a lounge environment that feels closer to a private members club. Why Palmilla Feels So COZY

About twenty minutes after landing, we arrived at One&Only Palmilla. And interestingly, Palmilla carries the same emotional rhythm as Aero.

Originally opened in 1956, the property carries a very different energy from many newer Cabo resorts. Instead of feeling oversized or overly polished, Palmilla feels deeply connected to its surroundings, with whitewashed buildings, tropical gardens, winding pathways, fountains, and uninterrupted views toward the Sea of Cortez.

For this stay, we checked into an Ocean View Junior Suite, which felt like the perfect introduction to the property. The suite blends traditional Mexican design elements with a softer residential feeling. Large terraces open toward the ocean, natural light fills the room throughout the day, and the atmosphere encourages a slower pace almost immediately.

One of the standout details of the suite was the bathroom. Spacious, bright and incredibly calming, it felt more like a private spa than a traditional hotel bathroom. Between the deep soaking tub, oversized shower and the way natural light moved through the space during the day, it became one of those rare hotel bathrooms you genuinely wanted to spend time in rather than simply use between activities.

One of Palmilla’s biggest advantages is also one of the most practical. It sits on one of Cabo’s few swimmable beaches, creating a gentler and far more relaxed rhythm throughout the stay. For first-time visitors to Cabo, that distinction matters more than most people realize.

Palmilla also works exceptionally well for travelers wanting balance during a short escape. Its location along the Tourist Corridor creates easy access to both Cabo San Lucas and San José del Cabo while still feeling private and removed from the heavier tourism energy found elsewhere in the destination.

And then there is the service. At Palmilla, hospitality feels very intuitive. Staff members quickly learn preferences, pacing feels natural, and the entire experience somehow remains luxurious without becoming overly formal.

The spa experience captures that philosophy beautifully. Nestled between tropical gardens and open-air pathways, the One&Only Spa feels intentionally secluded from the rest of the resort. Private outdoor treatment pavilions, plunge pools, rain showers, swaying day beds, and an open-air juice bar create an atmosphere that immediately encourages guests to relax.

One of the highlights became the contrast therapy circuit, moving between cold plunges, steam, sauna, and heat in a rhythm that felt both energizing and calming after travel. Palmilla also recently became the first property in Mexico to partner with Dr. Barbara Sturm, bringing the renowned skincare expert’s treatments and products exclusively to the resort.

After spending time at the resort, it becomes very easy to understand why One&Only Palmilla continues to hold Forbes Travel Guide Five-Star recognition. The attentiveness never feels performative. Instead, the service feels deeply personal, calm, and genuinely thoughtful in a way that quietly shapes the entire stay.

Cabo’s Food Scene Deserves More Attention

And then there was the food, which quietly became one of the defining parts of the entire experience.

Over the past few years, Cabo has quietly evolved into one of the most compelling culinary destinations in Mexico. Chefs, farmers, boutique hotels, and hospitality brands have built a dining scene that feels deeply connected to Baja’s landscape and slower pace of life.

And what makes this destination especially interesting is how naturally the dining experiences reflect the same rhythm we felt throughout the entire trip.

Flora Farms

Flora Farms has become one of the defining daytime experiences in Cabo, and for good reason. What started as a small organic farm has evolved into a sprawling community space where travelers, locals, chefs, and creatives all seem to gather naturally throughout the afternoon.

The 25-acre organic farm feels more like a small countryside community than a traditional restaurant destination. Gardens, pathways, boutiques, open-air dining spaces, and live music create an atmosphere where lunch naturally stretches into the entire afternoon.

The menu focuses heavily on seasonal ingredients, wood-fired cooking, handmade pastas, and a farm-to-table philosophy that helped shape the modern culinary identity of Los Cabos.

For first-time visitors, late brunch remains one of the best ways to experience Flora Farms because the property feels especially alive during daylight hours.

Árbol at Las Ventanas al Paraíso

Dinner at Árbol at Las Ventanas al Paraíso offers an entirely different side of Cabo.

Dark lighting. Ocean air. Fire features flickering beside the water.

The restaurant blends Baja seafood with Southeast Asian and Indian influences in a way that feels refined while still deeply atmospheric. Coconut, curry, smoke, citrus, and spice appear throughout the menu without ever overpowering the freshness of the ingredients.

The experience feels dramatic without becoming overly theatrical, which is a difficult balance to achieve in Cabo.

This is one of those dinners where timing matters. Reservations around sunset allow the restaurant to slowly transition from golden light into candlelit darkness, which is when Árbol feels most cinematic.

For travelers looking for a true special-occasion dinner in Cabo, this remains one of the strongest tables in the destination.

Metate

Then came one of the most unexpected meals of the weekend.

Metate Cabo feels far more intimate and grounded than many of Cabo’s larger luxury dining experiences.

In a destination often associated with spectacle, Metate focuses on something quieter and far more personal. The restaurant leans heavily into regional Mexican ingredients, open-fire cooking, mezcal, and dishes deeply connected to Baja’s culinary identity rather than simply international fine dining.

What makes Metate especially memorable is the pacing. Lunch here does not feel transactional. Courses arrive slowly. Conversations stretch naturally. Staff members genuinely explain ingredients, cooking methods, and regional influences throughout the meal.

The experience feels personal.

It became one of the strongest memories from the entire weekend.

Acre

If Flora Farms captures Cabo during the day, Acre Baja captures Cabo at night.

Hidden within a lush palm grove, Acre feels almost jungle-like after sunset. Lanterns hang between the trees, layered music moves softly through the property, and cocktails built around herbs, citrus, and smoke reinforce the atmosphere without overpowering it.

Acre captures a very different side of Cabo than most first-time visitors expect. Stylish without trying too hard.

The food remains highly seasonal and ingredient-driven, but what makes Acre particularly memorable is how naturally hospitality, design, music and atmosphere blends together throughout the evening.

The property itself has also become one of the defining hospitality brands in the region, with a strong focus on sustainability, local agriculture, and immersive guest experiences that extend far beyond dining alone.

For first-time Cabo visitors, Acre is essential.

Why Cabo Worked So Well for a Short Escape

What makes Cabo particularly compelling for a long weekend is the ease of the overall experience.

From Los Angeles, the flight is short, the time zone difference is minimal, and when the logistics are handled correctly, travelers can settle into vacation mode unusually fast.

And Cabo delivers exceptionally well on that balance. Luxury hotels, strong dining, wellness experiences and excellent service all exist within close proximity, allowing travelers to fully relax without constantly moving between destinations.
